Alturas

Last week, Kat and Asa left on their cross-country road trip back to college in North Carolina.  They made it to Alturas.  Thankfully, Alturas to Red Bluff is just under our deluxe AAA towing allowance of 200 miles.  (We have a deluxe towing package because it is less expensive than buying new cars.)  The driver’s side rear brake on his 1984 Rx7 started squealing horribly.  Parts in Alturas were over a week away, so he got towed home.  It turned out for the best because we discovered that the brake went bad because the axle shaft is warped.  Maybe not the best news, but at least they didn’t have a major breakdown or accident further along on their road trip.

Saying goodbye to Kat and Asa was hard the first time.  Having them come back for a few days before flying out was a double whammy.

With Kat and Asa here to help, we haven’t seen as much of Cisco (Sadie’s boyfriend).  But now he swooped back in to help.  It is very nice to have him around and of course his help is very much appreciated.  He runs his own business, the Downtown Ale House, and he is a musician; so, he is pretty busy.

Niche

We have been struggling to figure out what niche we might be able to fill, so that we can grow something (or somethings) and sell it for a good profit.  So far, it’s not potatoes, corn, or yellow tomatoes.  We’ve also been struggling to sell our eggplant, which is growing beautifully.  This week we have gobs of eggplant. 

Recipe – Sadie’s Eggplant Parm

Sadie made this eggplant parmesan this week and everyone devoured it (except Kat, who is a vegan.)  

Cut eggplant into 1/4” rounds.  Dip in egg batter, and bread with breadcrumbs and Italian type seasoning (thyme, basil, oregano, etc.)  Place on a baking pan and drizzle the top with olive oil. Bake in oven at 4oo degrees until the breading is crispy.  Then, in a glass baking pan, put a layer of your cooked eggplant, followed by layers of tomato sauce, fresh tomatoes, mozzarella cheese, parmesan cheese.  Then, layer again.  Bake in the same oven ~20 mins; should be bubbly and browning on top.
